package frozen "Boca Burger" or
Morningstar brand crumbles
1 heaping
teaspoon of instant chopped onion
Half jar of
your favorite salsa (I like Chi Chi's)
mild, med or hot to taste
2 packets of
Taco Bell taco sauce (requires a trip to
Taco Bell) (optional)
1/2 can of
Old El Paso vegetarian refried beans
8 oz. bag of
fat free shredded cheddar or Mexican
blend cheese
1 package of
fat free soft burritos (in the dairy case
at Publix) Spray a medium
skillet with Pam. Spread the
"Boca Burger" crumbles in the
skillet and mix in the salsa, onions
& taco sauce. If mixture seems
too dry, just add a little more
salsa. Cover and simmer for about
15 minutes. Then try to
spread the refired beans evenly over the
fake ground beef. Cover and simmer
another 10 minutes or so, until
hot. This disgusting looking mess
should not be watery at this point.
If too watery, remove lid and simmer off
excess water. Now remove from heat
and spread the cheese evenly over the
skillet - now that looks better, doesn't
it? Throw your soft burritos on the
microwave for about 15
seconds. Scoop a serving
spoonful of your filling in a burrito and
roll it up. Serve with Rice A Roni
brand "Mexican" variety and
some ice cold Dos Equis. !Muy
bueno! Makes 4-5 burritos
(If you
prefer chicken, substutute a 10 oz can of
Swanson or equivalent canned white meat
chicken, instead of the fake ground
beef.)
